Cava is Spain's answer to Champagne, and it is far more than just a budget alternative. Made using the same traditional method, with a second fermentation in the bottle, Cava is produced primarily in the Penedès region of Catalonia from indigenous Spanish grapes including Macabeo, Xarel·lo and Parellada.
