Domaine Fillon Chablis, Burgundy, France

Domaine Fillon Chablis, Burgundy, France
Hervé and Frédérique Fillon are fourth-generation winemakers, carrying on a century-old family tradition in the heart of Chablis. Their 45-year-old vines thrive in the famous Kimmeridgian limestone soils, giving their wines that unmistakable chalky minerality and crisp tension that make Chablis so iconic. Domaine Fillon is known for crafting classic, terroir-driven wines at incredible value, proving that world-class Chablis doesn’t have to break the bank.  This elegant, sophisticated Chablis is a masterclass in balance and purity, showcasing the best of its terroir. The first sip is zesty and electric, bursting with green apple, lemon zest, and a hint of candied pineapple, all wrapped up in a silky, mineral-driven core. A subtle almond and creamy yogurt note adds depth, softening the bright acidity without taking away from the wine’s signature freshness.

Gerard Tremblay PETIT Chablis, France
This unoaked Petit Chablis from Gérard Tremblay is a crisp, refreshing gem, crafted from vines between 10 and 30 years old. Pale straw yellow in color, it opens with vibrant notes of fresh mint and citrus, with just a touch of liquorice on the nose. On the palate, it’s wonderfully supple, offering layers of grapefruit peel and a clean, mineral edge that leads to a crisp, lingering finish. Petit Chablis is a lighter, more delicate expression than a traditional Chablis, perfect for those who love a fresh, mineral-driven Chardonnay. Ideal as an aperitif, this is Chablis at its purest and most vibrant. Gerard and Helene Tremblay are the 5th generation to make wine at the estate and have over 30 hectares including Premier Cru and Grand Cru. They have put huge investment into the property including a winery working entirely by gravity.

Gerard Tremblay, Chablis Premier Cru Montmains 2022
1
Gerard Tremblay, Chablis Premier Cru Montmains
The Chardonnay grapes for this surprisingly robust white wine hail from 40-year-old vines nestled in the esteemed 1er Cru 'Montmain' vineyard. A cleverly crafted blend, 30% of this wine gracefully matures in seasoned oak barrels, contributing to its luxurious and velvety character. In the glass, it boasts a brilliant pale yellow hue with hints of vibrant green. The aromatic profile reveals delicate acacia flower notes, ripe yellow nectarine, and zesty green citrus fruits. On the palate, it offers a round and creamy texture enriched with honeyed undertones that gracefully lead to a lively yet enduring finish. Gérard and Hélène Tremblay possess 34 hectares in Chablis, with 10 dedicated to Premier and Grand Crus. As the 5th generation of Tremblay at the helm, they've handcrafted much of their estate, including a state-of-the-art gravity-operated winery. This thoughtful approach minimizes intervention, ensuring the fruit's integrity remains intact, while avoiding the need for excessive manipulation or juice pumping. The wines they produce are the true essence of Chablis—resolute, pure, and brimming with mineral nuances.

Domaine Sautereau, Sancerre 2023, France
This is a masterclass in elegance and precision. The nose reveals layered aromas of candied citrus, white stone fruit, and subtle tropical notes of mango and pineapple. On the palate, the wine strikes a refined balance between the crisp vibrancy of its fruit and the textured depth imparted by lees ageing. A lingering saline minerality and a dynamic finish complete this beautifully structured wine, making it an ideal companion to fine seafood, goat cheese, or delicate vegetable dishes. Sancerre stands as a benchmark for world-class Sauvignon Blanc, and David Sautereau’s work embodies the region’s storied legacy. Based in the village of Crézancy, seven kilometres from Sancerre town, David is the tenth generation in his family to craft wines here. His vines, aged between 13 and 50 years, are planted on the famed “terres blanches” soils—rich in limestone and marine fossils—infusing his wines with a distinctive minerality and complexity. Through a meticulous vinification process, including ageing in stainless steel and egg-shaped concrete vats, David captures the essence of Sancerre’s terroir while embracing modern winemaking techniques.

Pouilly Fume, Domaine Corty 'Intro', Loire
1
Pouilly Fume, Domaine Corty 'Intro', Loire
Sancerre and Pouilly Fume are neighbours and produce similar wines, with Pouilly Fume often coming in at a better price point and offering excellent value. Vinified with natural yeasts in stainless steel and aged on the fine lees until bottling, the 2020 Intro opens pure and subtle on the nose that is nonetheless intense and even quite complex for an introductory wine and reminiscent of crushed (flint) stones and gravels as well as fresh white and green fruits. Perfectly round and elegant on the palate, this is an intense, immediately attractive, medium to full-bodied Pouilly with a good mineral finish and fruity charm.
