This is a serious white wine with depth and character, making it an excellent food wine. It pairs beautifully with white truffle dishes, seafood risotto, creamy pasta, and aged cheeses. A field blend of old-vine Cortese and Timorasso, sourced from parcels averaging 45 years old. Timorasso, a rare local grape once on the brink of extinction, is vinified separately, while the remaining varieties are co-fermented, bringing layers of freshness and complexity. The nose is savoury and mineral-driven, with notes of pear, quince, honeysuckle, guava, and wild herbs. The palate is bone-dry, textured, and vibrant, with a zippy acidity and a touch of salinity that lingers on a long, structured finish.
Tucked into the steep foothills of southeast Piedmont, Oltretorrente is the passion project of Chiara Penati and Michele Conoscente, a Milanese couple who left behind traditional winemaking careers to establish their own organic estate in Colli Tortonesi. Their vineyards in Paderna are so steep that all work is done by hand, with a focus on soil regeneration and biodiversity. They go beyond organic farming, planting cover crops and restoring the land to create a thriving ecosystem that reflects in their wines.
